Certificate in Hospitality (Professional Cookery incl. City & Guilds) Level 3

This introductory hospitality course gives you a complete foundation in professional cookery. You'll study a range of cookery methods, get an introduction to catering planning, costing and management, and take courses in kitchen safety and customer care.

As part of the programme you'll work in our Atrium Training Restaurant, which is open to the public two nights a week. You'll also obtain the National Certificate in Hospitality (Basic Cookery) Level 3, and the National Certificate in Hospitality (Introductory Cookery) Level 2.

Content Details

Atrium Restaurant - Training
You will work in our restaurant which is open to the general public twice a week. This will provide you will valuable and real-life experience in a training environment.

The Sticky Bun Shop
You will be given the opportunity to work in a retail environment selling your pastries to customers through our bakery.

Cookery Methods
You will learn about all cookery methods including frying, poaching, stewing, braising and sous-vide.

Applied Cookery
Building on from cookery methods this hands on course will teach you how to make dishes and present them for commercial cafes and restaurants.

Introduction to Catering Planning, Costing & Management
This course is designed to give you basic skills in costings and portion control in the commercial environment.

General Work Practices
You will be able to identify basic employment rights and responsibilities, and sources of information and assistance.

Kitchen Safety
This course is designed to support you to participate safely in the hospitality environment.

Customer Care in the Hospitality Industry
You will gain an awareness of customer needs in the hospitality environment, including customer complaints.

Comprehensive First Aid
You will learn comprehensive first aid and how to apply it in the hospitality industry.

Competitions
We aim to compete with the best! If you aim to be a culinary star, we offer you the opportunity to be selected to enter regional and national competitions. This will enhance your specific  skills in the tournament field. The hospitality team sees this as invaluable in your professional development.

English Language Requirements
If you are an overseas student or a new resident and English is not your first language, please note that study at tertiary level requires both written and oral participation.

You will be required to have an IELTS score of 5.5 or TOEFL score of 500.

Indicative Fees

  • $5,373 incl. course related costs

The standard published fee is applicable for New Zealand citizens and permanent residents only.

An international fee is payable for non New Zealand citizens/permanent residents.

Upon successful completion of the programme you will receive:
