The course teaches you to take full responsibility for your performance within a craft or plant baking environment and manage the performance of others.

As a graduate you'll be qualified to apply for roles in technical or managerial roles in the baking industry.

Content Details

During the programme you'll learn how to:

  • Apply advanced baking knowledge and skills to produce a range of specialist bakery products in a craft or plant baking environment. The products produced will be suitable for commercial, specialist and individual clients/customers, and will be a minimum of four specialist baking products selected from: Biscuit and Cake; Bread; Cake; Pastries; Gluten Free.
  • Ensure personal or team (or bakery) compliance with safe food handling, personal hygiene, and occupational health and safety practices
  • Identify sub-standard products and apply a range of solutions to remediate baking processes and product quality issues
  • Demonstrate team leadership skills
  • Apply baking knowledge and practice to explore the application of new approaches, techniques and technology
  • Apply an understanding of baking and business principles to the design and management of a bakery

Entry Criteria

  • Completion of New Zealand Certificate in Baking (Level 4), OR
  • Equivalent industry experience

Domestic applicants aged 20 years or above who do not meet the academic entry requirements above, but whose skills, education or work experience indicate that they have a reasonable chance of success, may be eligible for special admission. 

Information Meeting:
Students will be required to attend an information meeting on application to ensure they are well informed about the programme, understand the practical and physical demands of working in a commercial kitchen environment and that classes will be timetabled in early morning and evenings. 

ENGLISH LANGUAGE REQUIREMENTS

International applicants for whom English is not their first language will be required to show evidence of language competency, issued within the last two years, before being eligible to enrol in any non-English programme. The level of competency required is outlined in Rule 18 and Appendix 2 of the NZQF Programme and Accreditation Rules 2013. And below under the title English Competency.

English Competency

Level 5 certificate or diploma IELTS Academic score of 5.5 with no band score lower than 5 or completed NZ Certificate in English Language L4 with the Academic Endorsement or meets a relevant English Proficiency Outcome as outlined in Rule 18 and Appendix 2 of the NZQF Programme and Accreditation Rules 2013.

For domestic applicants for whom English is not their first language, evidence of language competency may be required.
